Spinach and onion quesadilla

I helped host a bridal shower this weekend and was asked to make some foods. One of the foods I was supposed to bring was quesadillas. I didn’t want to bring just plain quesadillas so I improvised. They were a hit and a few people asked for the recipe. I should warn you, in case you can’t tell by some of my other recipes, I like to use butter.

1 cup frozen spinach, thawed and drained
2 yellow onions, chopped
1 tbls butter
salt and pepper to taste
blend of shredded Monterey jack and cheddar cheese
Tortillas

Saute onions with butter until caramelized. Heat spinach and combine with onions. Set aside.
In a skillet, heat about half a pat of butter. Place one tortilla in the skillet. As the tortilla is warming up, place some of the onion/spinach mixture on half of the tortilla and top with some cheese. Close the tortilla by folding it in half and cook until slightly brown on both sides. Cut into quarters to serve. Keep it up until spinach and onions or tortillas are gone.

Since it’s almost time to stuff ourselves, I thought this might be an appropriate time for this topic. Everyone thinks about it and most people aren’t at what they think is their ideal weight. If you are, please turn around so that I can kick you in your skinny butt. I might start with my mom, since she will be arriving tomorrow. While I was talking to her the other day, she told me that she is currently at the heaviest weight she has ever been in her whole life. The thing is, her weight is just about equal to mine.

For the past three years I have maintained a steady weight. Maybe it has gone up or down one or two pounds here or there, but for the most part my weight has held firm (or flabby) since I stopped nursing Allison. Okay, maybe I lost a few pounds after that, but not as many as I had hoped. Sure there was the time I lost eight pounds in a few days because of illness, but eventually, it found its way back.

Don’t get me wrong or anything, my doctor says I am still within the borders of healthy weight for my height and body shape. It’s just not my ideal weight. In my dream world I would weigh about 10 pounds less. That doesn’t sound like so much. I just can’t seem to make it happen. I’m sure it would help if I actually did anything besides sit around and watch TV.

Do any of you have a workout routine? When do you find the time to workout? I like sleeping in a little in the mornings, getting up just when I have to to get myself and the kids cleaned up, dressed, fed and off to school/work, so mornings are out. When I get home from work, it’s time to cook dinner, have some family time, and get into bed. So it looks like evenings are out. I wish I could find some kind of program that would just exercise me while I sleep.

Tomorrow is Thanksgiving Feast at school before the kids are off for holiday break. Zoey’s class was easy, two cans of corn and some napkins. Nathan’s teacher called me this morning to ask if I would send mashed potatoes for his class. The only problem is I wasn’t sure whether to make them for his homeroom class or if his afternoon and morning classes were combining. Twenty servings or forty servings. Big difference. His teacher said to bring a full pan. Better to make too many than not have enough, right?

I don’t have any fake potatoes (instant). I felt like I was on KP duty. I peeled just a little more than five pounds of potatoes. Boiled them up, added butter (lots of butter for lots of potatoes) and milk, then mashed away. Mashed potatoes are one of my favorite foods. I think I could eat them every day and not get sick of them.

Northern wind

So, this is a post that I typed up exactly one year ago but never posted. Want to know something really weird? Same thing happened this year. We could stand outside and watch the cold front move in.

A little post about weather. YEAH!! How exciting!! Weather!

Fall is finally here. Sure, the trees have been changing color, but it has still been in the upper 70’s lower 80’s. The night before last the wind blew and blew. So much that it woke me up around 5am* and I couldn’t go back to sleep. Turning on the news it said that we were experiencing heavy winds. Thanks weatherman!

While the kids were getting ready, each of them asked if they could wear shorts and short sleeve shirts to school. I made them wear long sleeves and long pants. I even made them throw jackets into their backpacks. They thought I was crazy. When I dropped them off at school the temperature was 75. When Greg picked them up, it was 40. 35 degrees people!

By now it should come as no surprise to anyone that has been keeping up with this blog that Allison’s sleeping arrangements have been an ongoing struggle for us, well, since birth. I mean, if you do a search for this blog (over on the right side) for Allison and Sleeping, almost all of the entries that come up document our troubles. Just when we think we have a routine that is going to stick, she completely throws us for a loop. Remember back when I decided to try family bedtime stories again? For the most part, this is still what we do. But Allison still begs every night to sleep with me in my bed. It is so much more comfortable.

I have convinced her that on school nights she has to sleep in her bed, but on weekends, anything goes. Most weekends we let the kids stay up a little later watching TV in the living room. They usually end up with their blankets and pillows and fall asleep while watching something. Not Allison though, she is a trooper. She stays awake until Nathan and Zoey have dropped into dreamland then comes into our room to claim her sleeping rights. Two nights of sharing the bed is so much better than every night full of crying and begging (not all from Alli*).

On a slightly related note, because it is about sleep and Allison. The best part of daylight savings has been the mornings. It is cool enough for the big blankets and hitting the snooze button to snuggle in just a bit longer. Since she wakes up an hour earlier, Allison comes into our room and burrows in with us 15 minutes before it is time for the real alarm to go off. It’s fantastic.

* Allison is learning how to spell her name. Since there is no E in her name, we’ve dropped it for now. This morning someone asked her what her name was and how she spells it. She thought for about 3 seconds and said, “A-L-L-I”. Pretty cool.

Tonight we had to run an errand in a town that has a different choice of fast food restaurants than our standard few. After we had ordered and were waiting to pull up to the food window, Allison piped up from the back seat, “Hey, I know just what that sign says!”

She has been on a roll with the bathroom humor lately. On our way back from Shreveport this weekend, she must have smelled something that didn’t agree with her nose. “Gross! Is there a camel around here? Because I sure smell some camel poop. There must be one walking in front of us!”

This happened in five minute increments the whole hour long drive home. “Can anyone see that camel?” It’s a little strange because we don’t come into contact with camels, or for that matter, talk about their poop. What would make her think of this? She also loves to make farting noises and point the blame at someone else. Really though, who can fault her for that one?

It’s BACK!

Project Runway is back! While I haven’t been counting down the days until the season premiere or anything, I was super happy to see it on the “to-do” list to record tonight. Sure, I didn’t watch the first season. I started with season two and have been a dedicated viewer since then.

I know, not a huge post, but it still counts right?
