I love Mardi Gras. Every year I make everything jambalaya and we drink Abita Turbo Dogs and have beignets for dessert. This year I had to improvise and figure out how to make it for a vegetarian (or pesketarian). Fake chicken, morning star sausage and shrimp. Couldn't tell much of a difference.
